Here's the short version. Real shearling means the fleece and the leather come from the same hide, what's called hide-to-fleece continuous shearling in the trade. Collar, cuffs, interior lining, all one continuous material. Not trim. Not an add-on. Flight crews needed room for insulated suits underneath their originals decades ago, and the silhouette stuck because it works.
